The Hop Spring brewery is primarily focussed on developing a small range of high-quality, traditionally-brewed, cask-conditioned beers.

Maris Dancer

Our first publically available beer - light gold in colour, strong hop flavours and full-bodied.
The wheat malt helps to give a this beer a lovely head, as well as a slight haze.

92% Maris Otter Pale Malt
8% Wheat Malt
Challenger, Cascade and sometimes Citra too.

Oakington Sunset

Yet to be sampled, Oakington Sunset should be a clear, clean-tasting, blonde beer with a satifying bittersweet balance of traditional Goldings hops and the more recently popular Citra.

100% Maris Otter Pale Malt
Goldings, Styrian Goldings (Celeia), and Citra

Adversary Falls

Made with added wheat malt for body, this two-hop blonde is yet to be seen in public.

Eternal

Puns first, beer later. If and when I hit upon a reliable and popular recipe that people just can't get enough of, then we will have discovered "Hop Spring's Eternal".

Secondary ingredients

I use natural, single-strain, non-GM, English Ale yeast for fermention, and small amounts of a seaweed called Irish Moss that helps the beer to clear.

Both the yeast and the Irish Moss should settle to the bottom of the cask or bottle as the beer conditions, and shouldn't make it as far as the glass, which is why I don't list either as ingredients.

Additives, sugar and finings

It is quite common for commercial breweries to add sugar to their beer to speed up the time it takes for beer to reach good condition. Many breweries also add Isinglass, a geletin/collegen derived from swim bladders of sturgeon and other fish, to clear their beer.

We use no additives or cask finings. All Hop Spring beer is made from Water, Malt, Hops, Yeast and smidgen of Irish Moss, and nothing else, (except time).
